Easter Nest Cupcakes



Last Easter I baked these mini cupcakes for my family's Easter Party. Everyone was pretty impressed by their look and some even took a pic with their phone.


As Easter Sunday is tomorrow, I'd love to share this recipe with you. It's quiet easy and you can't really go wrong.


Recipe for about 15 mini Easter Cupcakes:

- 60g flour
- 60g soft butter or margarine
- 1 egg
- 1 teasp.baking powder
- 1 tablesp. of cacao powder

Mix all the ingredients and fill the mixture into mini cupcake trays. Preheat the oven to 180° C and bake for about 8 minutes.


For the buttercream:

- 120g soft butter
- 30g icing sugar
- green food coloring

Beat the soft butter until it gets fluffy. Then slowly add the icing sugar and continue beating until it forms some peaks. Mix in your food coloring and fill into a paping bag with a nozzle containing small holes. Wait until your cupcakes are cooles down and then start pipping the grass.


For the nests:

- 100g chocolate
- 100g chopped almonds
- 15b sugar or chocolate eggs

The nests can also be prepared in advance. Melt the chocolate and mix with the almonds. Put them into cake pops molds or molds with a similar shape. Let it cool down and put an egg into each nest.
Finally top your grass with a nest and enjoy!
