Apricot Berry Tart



If you're looking for an easy and delicious recipe for a tart, this one is perfect.


It's not one oft these tart bases that have nearly no flavour on their own. The  juicy dates, almonds, coconut and cinnamon make it the perfect base for the vanilla cream and fresh fruits.


I made two of them for a brunch last year and everything got eaten up. So get in your kitchen and start creating this refreshing vanilla fruit tart.


For this recipe you'll probably need a food processor to make the `dough' real smooth.

Here's the recipe:

- 100g almonds
- 30g grated coconut
- 25g cranberries
- 1 tablesp. flour
- 1 1/2 tablesp. maple syrup
- 2 tablesp. water
- 1 teasp. cinnamon oil
- 3 dates
- 2 teasp. coconut oil

Mix all these ingredients in a food processor until smooth. Press the dough into a tart form and bake them at 170° C for about 6 minutes.

For the filling:

- 350g vanilla creme
- 2 apricots
- fresh berries

Let the tart cool down and fill it with vanilla cream. You can also replace the apricot and berries with some seasonal fruits.
